Hello! With Shrove Tuesday just around the corner, I thought a Pancake recipe might be in order!

This recipe is about as healthy as Pancakes get and is easy to make with children. Remember that hot oil and children are not a good mix! Perhaps get them to lay the table whilst you cook them once the batter is made?

Ingredients

125g (4½ oz) wholemeal flour
1 medium egg
300ml (½ pt) semi-skimmed milk

Method

Place the flour in a large bowl, mix in the egg and gradually whisk in the milk to give a smooth batter.
Heat a little oil in a small frying pan and add a little of the batter to cover the base thinly.
Cook the pancake for 1 min until golden, turn and cook for 30 seconds.
Repeat to make eight pancakes and then use the tip to fill your pancake.
Top them with whatever you like…fresh lemon juice and sugar is a personal favourite and children everywhere love Nutella so spread some on, roll and eat – Yum! Alternatively, go down the super-healthy route and cover your pancakes in fruit – a coulis of fresh berries works well and are always a hit with the children!
