Hello – here we are again. Today I have a very easy recipe which always goes down very well with the children. It’s so easy to do and is relatively cheap too. Tomatoes and Mozzarella is a great combination and this is perfect for a lazy Saturday lunch or brunch.
1 Ready-Rolled puff Party Sheet (available from supermarkets)
100g Parma Ham (or similar)
2 Cloves Garlic
4 Large Tomatoes (Sliced)
1 Ball of Mozzarella Cheese (sliced)
2tbsp Olive Oil
Basil leaves (chopped)
Beaten Egg to Glaze
Unroll pastry sheets and cut each in half across length, place pastry on baking sheets.
In a food processor combine ham, garlic, olive oil and black pepper to form a paste. Spread over pastry pieces, leaving a border of approx. 1.5cm.
Top with overlapping tomato slices, every now and then putting in a thin slice of cheese. The ham mixture should be covered at the end. Brush borders with beaten egg and bake off for 12-15 min until borders have risen up around filling and pastry is golden. Sprinkle with chopped basil and if desired drizzle a little olive oil over the tomatoes before serving hot.
NB If you do not have a food processor or blender, omit the garlic and oil and just snip the ham into small pieces and scatter over pastry pieces.
